Ingredients


Cake Ingredients:

• 2 cups all-purpose flour

• 2 teaspoons baking powder

• ¼ teaspoon salt

• 4 large eggs

• 2 cups granulated sugar

• 1 teaspoon vanilla extract

• 1 cup plain Greek yogurt

• 1 cup vegetable oil


Cream Cheese Filling:

• 1 package (8 oz) cream cheese, at room temperature

• 1 large egg

• 3 tablespoons granulated sugar

• ½ can strawberry pie filling


Directions:


  1. In a bowl, mix together softened cream cheese, sugar, and the egg until everything is well combined and smooth. Set aside the cream cheese filling.


  2. In a separate bowl, whisk together the other eggs and sugar for 2 minutes until smooth. Add the vegetable oil and vanilla extract, then whisk again. Stir in the Greek yogurt until fully incorporated.


  3. Add in the flour, baking powder and salt into the wet mixture. Whisk until just combined - do no over mix.


  4. Grease a 10-12 cup bundt cake pan with non-stick spray. Pour 2/3 of the cake batter into the pan and evenly spread with a spatula. Using an ice cream scoop, place dollops of the cream cheese filling into the center of the batter. Add spoonfuls of strawberry filling on top of the cream cheese (use only half the can). Gently pour the rest of the batter over the top to cover the filling completely.


  5. Preheat the oven to 350F and bake for 55 minutes. Let the cake cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.


  6. Dust with powdered sugar before serving. Enjoy!
