Ingredients: 


Blueberry Filling:
  • 2 tablespoons flour juice of half of a lemon (medium size)

  • 3 tablespoons sugar

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon pumpkin pie spice

  • 2 packages of blueberries (total of 510g or 3 cups)

  • 1/8 teaspoon salt


Crumble Topping:
  • 1/2 cup cold cubed butter

  • 1 cup old fashioned oats

  • 1/2 cup all-purpose flour

  • 3/4 cup brown sugar

  • 1/8 teaspoon salt


Directions:


  1. In a bowl, mix together the blueberries and lemon juice. Then add in the flour, sugar, salt, cinnamon, and pumpkin pie spice. Stir everything together gently with a spatula until combined.


  2. Lightly grease a 9 1/2 inch pie dish with non-stick spray. Pour in the blueberry mixture and spread it evenly.


  3. In a separate bowl, combine the flour, salt, brown sugar, and oats together. Add in the cubed butter and use a pastry cutter to cut the butter into the dry ingredients until the mixture resembles course crumbs.


  4. Sprinkle the crumble topping evenly over the blueberry filling.


  5. Preheat the oven to 350F and bake for 25 minutes, or until the edges bubble. Let the blueberry crisp cool at room temperature for 20 minutes before serving.


  6. Serve with vanilla ice cream, or whipped cream. Enjoy!
