Serves: 8
Prep time: 30 Minutes
Bake time: approx. 60 minutes
Ingredients:
• 4 mashed ripe bananas
• 1/2 cup butter, melted and browned
• 3/4 cup granulated sugar
• 1/4 cup brown sugar
• 2 large eggs
• 1/4 cup milk
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 1- 1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon ground cinnamon
Directions:
Preheat the oven to 350F. Grease a 9x9 inch loaf pan with butter and line it with parchment paper, leaving an overhang on the sides for easy removal.
In a small saucepan, melt the butter over medium heat. Stir frequently for about 15-18 minutes. The top will foam, then turn a clear golden, and finally develop into a toasty brown. Set aside and allow it to cool for 10 minutes.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt.
In a separate large bowl, whisk the cooled brown butter, brown sugar, and granulated sugar for about 1 minute until combined. Add the eggs, vanilla extract, milk, and mashed bananas. Whisk until the mixture is smooth and well combined.
Gently add the dry ingredients into the wet ingredients and whisk until combined. Do not over mix.
Pour the batter into the prepared pan. Optional: Add toppings such as chocolate chips, pecans, walnuts, etc.
Bake for approximately 1 hour and 8 minutes, or until toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 20 minutes before transfering to a wire rack to cool completely.
Slice, serve and enjoy!
