Serves: 8-10

​Prep time: 10 minutes

Bake time: 35 minutes


Ingredients


  • 2 large eggs

  • 1- 1/4 cups milk

  • 3/4 cup vegetable oil

  • 3 cups tapioca flour

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated or shredded parmesan cheese

  • 1-1/2 teaspoons salt


Directions:


  1. Preheat the oven to 400F.


  2. In a blender, add vegetable oil, milk, eggs, shredded parmesan, shredded mozzarella, salt, and tapioca flour.


  3. Blend for 1 minute, or until the mixture is completely smooth.


  4. Lightly spray a bundt pan with non-stick spray.


  5. Pour the mixture into the prepared bundt pan.


  6. Bake for 35 minutes, or until set and lightly golden.


  7. Carefully loosen the edges using an offset spatula, making sure the bread is not sticking to the pan.


  8. Carefully invert the bundt pan onto a serving dish.


  9. Slice, serve warm and enjoy!
