Ingredients:


  • 1 can sweetened condensed milk

  • 1 - 1/2 teaspoon pumpkin pie spice

  • 1/2 teaspoon cinnamon

  • 2 cups heavy cream

  • 1 teaspoon vanilla extract

Directions:


  1. Cut leftover pumpkin pie into small bite-sized pieces and set aside.


  2. In a bowl, whisk the sweetened condensed milk, pumpkin pie spice, cinnamon, vanilla extract, and heavy cream together until well combined and peaks form.


  3. Gently fold in the pieces of pumpkin pie into the ice cream mixture.


  4. Spread into a freezer-safe container. Smooth the top, and garnish with extra pumpkin pie pieces. Cover with plastic wrap and freeze for a minimum of 6 hours, or overnight, for best results.


  5. Let it sit at room temperature for 15-20 minutes before scooping. Serve with whipped cream and a sprinkle of cinnamon. Enjoy!
