Ingredients


  • 8oz cream cheese (room temperature, softened)

  • 1/3 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 cup heavy whipping cream

  • 3 tablespoon granulated sugar

  • 1-1/3 cups vanilla yogurt

  • 1/2 box instant vanilla pudding

  • 1 teaspoon fresh lemon juice

  • 2 packages fresh sliced strawberries

  • 1/2 cup white chocolate chips

  • 1/2 cup toasted coconut


Directions:


  1. In a large bowl, whisk together the heavy cream and powdered sugar until firm peaks form. Set aside and place in the refrigerator.


  2. In a separate bowl, whisk together the cream cheese, sugar, and vanilla extract until smooth. Add in the vanilla pudding mix and whisk until fully combined.


  3. Remove the whipped cream from the refrigerator and gently fold it into the cream cheese mixture, adding half at a time.


  4. Add in the vanilla yogurt and lemon juice. Mix until everything is fully incorporated.


  5. Add the sliced strawberries, chopped white chocolate, and sweetened shredded coconut. Use a spatula to gently fold everything together.


  6. Cover with plastic wrap and refrigerate for at least an hour.


  7. Scoop into cups and top with extra sliced strawberries and shredded coconut. Enjoy!
