Ingredients:
• 3 large hard-boiled eggs
• 2 tablespoons mayo
• 1 teaspoon relish
• ½ teaspoon dill pickle mustard
• 1 teaspoon white vinegar
• ¼ teaspoon salt
• ¼ teaspoon black pepper
• ¼ teaspoon paprika
• ½ teaspoon dried parsley
• ½ teaspoon onion powder
• ¼ teaspoon Vidalia onion (finely minced)
Directions:
Boil the eggs for 7 minutes until soft boiled. Immediately place them in an cold water bath to cool. Once cooled, peel and dice the eggs into bite-sized pieces. Place them in a medium bowl.
In a separate small bowl, whisk together mayonnaise, relish, dill pickle mustard, and white vinegar until smooth. Add onto the eggs.
Add in the Vidalia onions, salt, black pepper, paprika, dried parsley, and onion powder.
Mix gently until the eggs are completely and evenly coated.
Chill for at least 30 minutes to let the flavors meld.
Serve on bread, croissants, crackers, or lettuce wraps. Enjoy!
