Ingredients


  • 2 cups strawberry puree - 1-1/2 pounds strawberries

  • 2 large eggs

  • 1/4 cup milk

  • 1/2 cup melted butter (I used salted)

  • 2 cups all-purpose flour

  • 1-1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1-1/4 cups sugar

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt


Strawberry Icing:
  • 1-3/4 cups icing sugar

  • 3 tablespoons strawberry puree

  • 1/4 teaspoon vanilla extract

  • 1 teaspoon milk (if needed)


Directions:


  1. Preheat the oven to 350F and prepare a 12x6 inch loaf pan that has been greased and lined with parchment paper for easy removal.


  2. Add the strawberries into a blender with 3 tablespoons water. Blend until it is completely smooth. Note: Set aside 3 tablespoons of puree to use later for the icing.


  3. In a large bowl, whisk together the sugar and melted butter until well combined.


  4. Add the eggs, milk and vanilla extract. Whisk until the mixture is smooth.


  5. Pour in the strawberry puree and mix again.


  6. In a separate bowl, whisk together the salt, flour, baking soda. and baking powder to remove any lumps.


  7. Gently add the dry ingredients into the wet ingredients. Mix until just combined; do not overmix.


  8. Pour the batter into the prepared loaf pan. Use a spatula to level the top.


  9. Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.


  10. After baking, let the loaf cool in the pan for 10 minutes, then move to a wire rack to cool to room temperature for at least 1 hour.


  11. In a small bowl, whisk together the icing sugar, strawberry puree, vanilla extract and milk.


  12. Spread the icing over the cooled loaf. Let it set in the fridge before slicing.


  13. Slice and serve. Enjoy!
