Ingredients


  • 2 cups + 2 tablespoon flour

  • 1 teaspoon baking soda

  • 1-1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup granulated sugar + extra for topping

  • 1/4 cup milk

  • 1/4 cup heavy cream

  • 1 large egg

  • 1/2 cup frozen shredded butter

  • 1 honey crisp apple finely chopped

  • 2/3 cup shredded cheddar cheese

  • 1-2 tablespoon heavy cream - brushing stones before baking


Directions:


  1. In a large bowl, whisk the flour, baking soda, baking powder, salt, and sugar just to combine. Set aside.


  2. Shred the frozen butter using a box grater.


  3. Chop the apple into small, finely dices pieces.


  4. Shred the cheddar cheese.


  5. In a separate bowl, whisk together the milk, heavy cream, and egg.


  6. Add the shredded butter to the flour mixture. Use a pastry cutter (or your hands) to work it in until the mixture looks crumbly.


  7. Pour the wet ingredients into the dry mixture and gently mix until just combined.


  8. Fold in the chopped apples and shredded cheddar cheese.


  9. Lightly flour the counter. Turn out the dough, fold it over on itself a few times, then shape into a 7-8 inch round disk about 3/4 inch thick.


  10. Cut the disk into 8 equal triangles.


  11. Place the scones on a baking sheet that has been lined with parchment paper, leaving space between the scones.


  12. Brush the tops with heavy cream (or an egg wash). Optional: sprinkle sugar on top.

  13. Preheat the oven to 400F and bake for 18 minutes, or until they are golden. Let it cool for 5 minutes before serving.


  14. Serve warm with butter, clotted cream or jam. Enjoy!
