Ingredients


• 1-1/2 cups rolled oats

• 1/3 cup unsweetened cocoa powder

• ½ teaspoon baking powder

• ½ teaspoon salt

• 2 large eggs

• 1 cup milk

• 2 tablespoons plain Greek yogurt

• ⅓ cup honey

• ¼ cup melted butter

• 1 teaspoon vanilla extract

• ⅓ cup mini semi-sweet chocolate chips (+ more for topping)


Directions:


  1. Preheat the oven to 350F.


  2. In a bowl, whisk together the unsweetened cocoa powder, baking powder, and salt. Stir in the chocolate chips and set aside.


  3. In a separate bowl, whisk together the eggs, honey, and Greek yogurt. Then add in the melted butter, milk, and vanilla extract, whisking until fully combined.


  4. Fold the rolled oats into the wet ingredients. Gradually add the dry ingredients and mix until just combined.


  5. Lightly spray an 8x8 inch baking dish with non-stick spray.


  6. Pour the batter into the prepared baking dish and spread evenly with a spatula.


  7. Sprinkle additional chocolate chips on top, if desired.


  8. Bake for 25-30 minutes, or until it is set in the center. Allow the pan to cool for 30 minutes before slicing and serving.


  9. Serve with a dollop of Greek yogurt and a dash of cinnamon. Enjoy!
