Ingredients


• 1/3 cup of milk

• 1 cup of plain Greek yogurt

• 1/3 cup of melted butter

• 2/3 cup of granulated sugar

• 1/3 cup of brown sugar

• 1 large egg

• 1 teaspoon of vanilla extract

• 1-1/2 cups of all-purpose flour

• 2 teaspoons of baking powder

• 1/4 teaspoon of baking soda

• 1/4 teaspoon of salt

• 1 cup of mini semi-sweet chocolate chips (or regular chocolate chips)


Directions:


  1. In a large bowl, whisk together the sugar, brown sugar, and melted butter until smooth.


  2. Add the egg, plain Greek yogurt, and vanilla extract. Whisk until fully combined.


  3. Whisk in the milk.


  4. In a separate bowl, whisk together the flour, baking powder, baking soda and salt.

  5. Toss 2 tablespoons of the dry mixture into a bowl with chocolate chips to prevent sinking.


  6. Add the dry ingredients into the wet ingredients, whisking until just combined - do not overmix.


  7. Fold in the coated chocolate chips.


  8. Grease a muffin pan with non-stick spray.


  9. Divide the batter evenly and fill each muffin cavity 3/4 full. Sprinkle extra chocolate chips on top.


  10. Preheat the oven to 435F and bake for 7 minutes, then reduce the oven temperature to 375F and continue baking for 20 minutes.


  11. Cool in the pan for 10 minutes before serving. Enjoy!
