Ingredients
1-1/3 cup sugar
8 tablespoons butter at room temperature
2/3 cup heavy cream (35% fat or higher)
1 teaspoon salt
1 teaspoon vanilla extract
3 tablespoons water
Directions:
In a saucepan over medium heat, add the sugar and water. Stir once, then let it cook without stirring until the sugar dissolves and turns into a deep amber color. (Swirl the pan gently if needed, but do not stir with a spoon).
Once the sugar has caramelized, remove the pan from the heat and let it sit for 2 minutes. Gradually add in the heavy cream and continuously stir. The mixture will splash and bubble - be careful.
Add in the salt, vanilla extract, and butter. Keep stirring until the butter is completely melted.
Let it sit for 5 minutes before pouring into a food-safe jar.
Allow the sauce to completely cool in the jar, then cover and store in the fridge for up to 2 weeks. Enjoy!
