Ingredients


Oat Crumble Crust & Topping:

  • 1-1/4 cups all-purpose flour

  • 1/4 cup cornstarch

  • 1-1/2 cups oats

  • 1 cup brown sugar

  • 1-1/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 cup cubed salted butter, room temperature


Date Filling:

  • 16 oz (1 lbs) dates, chopped and pitted

  • 1 cup water

  • 1/3 cup granulated sugar

  • 3 tablespoon brown sugar

  • 1 teaspoon vanilla extract

  • Pinch of salt


Directions:


  1. Preheat the oven to 350F. Grease a 8x8 inch baking pan with non-stick spray and line with parchment paper.


  2. Into a large bowl, whisk together the flour, cornstarch, baking powder, oats, brown sugar, and salt.


  3. Add the cubed butter on top. Work the butter into the dry ingredients using your hands until a course, crumbly mixture forms.


  4. Press half of the crumble mixture into the bottom of the prepared pan in an even layer to form the base.


  5. In a saucepan, combine the dates, water, granulated sugar, and brown sugar. Place over medium heat and bring to a boil while stirring occasionally (about 10 minutes).

  6. Once boiling, continuously stir for 3 minutes until the mixture thickens into a paste.

  7. Remove from the heat and stir in the vanilla extract. Let the date filling cool for 20 minutes.


  8. Spread the cooled filling evenly over the bottom crust using a spatula. Evenly scatter the remaining crumble mixture over the top.


  9. Bake for 35-40 minutes until the top is a golden brown.


  10. Allow the bars to cool completely in the pan for at least 2 hours before slicing.


  11. Slice into even squares and enjoy!
