Ingredients


  • 1-8oz package cream cheese, at room temperature

  • 1 can sweetened condensed milk (300 ml)

  • 3/4 cup granulated sugar

  • 1 can evaporated milk (354ml)

  • 2 teaspoons vanilla extract

  • 4 large eggs, at room temperature

  • 1 caramelized sugar recipe


Directions:


  1. Make the homemade caramelized sugar.


  2. In a blender, combine the cream cheese, evaporated milk, sweetened condensed milk, eggs, sugar, and vanilla extract. Blend for 1-2 minutes until smooth.


  3. Lightly grease a 10 cup Bundt cake pan with non stick spray.


  4. Slowly pour the caramelized sugar around the base of the pan. Use a spatula to gently drag the caramelized sugar up the middle and the sides to coat.


  5. Slowly pour the mixture onto the back of a spoon all around the pan to not disturb the caramelized sugar.


  6. Wrap the pan tightly with aluminum foil. Place it inside a large roasting pan and carefully pour about 1 inch of boiling water into the roasting pan (around the flan pan).

    Optional: Add 2-3 tablespoons of vinegar into the water to prevent discoloration of the pans.


  7. Preheat the oven to 350F and bake for 1 hour and 20 minutes. After 30 minutes of baking, remove the aluminum. Allow the pan to cool at room temperature for 2 hours before placing in the refrigerator to chill overnight.


  8. Carefully run a butter knife around the edges to loosen the flan from the pan. Invert the flan onto a serving platter, letting the caramel sauce to flow over the top.


  9. Slice, serve and enjoy!
