Serves: 3 (1/2 cup of pudding mix)

Ingredients


  • 1 cup cornstarch

  • 1 cup dry milk powder

  • 1 - 2/3 cups granulated sugar

  • 2 vanilla beans

  • 1 teaspoon salt

  • 8 - 10 drops yellow food coloring (optional)


How to make vanilla pudding:
  • 2 cups milk (2% or 3%)

  • 2 - 3 teaspoons pure vanilla extract

  • 1/2 cup vanilla pudding mix


Directions:


  1. Slit the vanilla pods lengthwise down the middle and open it slightly. Slide the knife along the pods to scrape out the seeds.


  2. In a bowl, whisk together the sugar, cornstarch, dry milk powder, salt and the scarped vanilla bean until well combined.


  3. Funnel the pudding mix into an airtight jar or mason jar.


  4. To make vanilla pudding, gradually whisk together the milk and pudding mix in a saucepan. Turn the stovetop to medium-low heat and continuously stir for about 7 minutes until the mixture is thick and bubbling. Remove from heat and mix in the vanilla extract. For a classic look, add in yellow food coloring (optional). Pour the pudding into serving dishes and refrigerate until fully set. Enjoy!
