Ingredients
Crust:
1/2 cup flour
1/2 cup oats
4 tablespoons brown sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
4 tablespoons butter, melted
Topping:
1/3 cup melted butter
3 tablespoons brown sugar
2 tablespoons honey
2/3 cup oats
1/4 cup chopped pecans
1/4 cup chopped walnuts
1/4 cup shredded coconut
1/4 cup pumpkin seeds, unsalted
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/3 cup raisins
Direction:
In a large bowl, mix together the flour, oats, baking powder, salt and brown sugar. Add the melted butter and mix until well combined.
Prepare a 8x8inch baking dish that has been greased with non-stick spray and is lined with parchment paper. Pour the crust mixture into the pan and press it down firmly using your hands or the back of a spoon.
Preheat the oven to 350F. Bake the crust for 14 minutes, or until the edges are golden.
In a bowl, mix together the melted butter, honey and brown sugar until smooth.
Add in the oats, pecans, walnuts, pumpkin seeds, raisins and shredded coconut. Stir together the dry ingredients into the wet ingredients. Add the salt and cinnamon, and mix until fully incorporated.
Once the crust is out of the oven, let it cool at room temperature for 10 minutes. Then, pour the topping evenly over the crust and gently press it down with your hands or with a spatula.
Return the dish to the oven and bake for 20 minutes, or until the top is a light golden brown and firm to the touch. Let it to cool completely in the pan.
Once it it cooled, slice into bars by cutting vertically into four sections, then horizontally. Enjoy!
