Ingredients


• 2- 3/4 cups all-purpose flour

• 1/4 cup unsweetened cocoa powder

• 2 tablespoons baking powder

• 1/2 teaspoon salt

• 3–4 tablespoons sugar (adjust to taste)

• 2 large eggs

• 2-3/4 cups milk

• 1/2 cup melted butter, cooled

• 1 teaspoon vanilla extract


Directions:


  1. In a bowl, whisk together the melted butter, vanilla extract, milk, and egg until well combined.


  2. In a separate large bowl, whisk together the flour, unsweetened cocoa powder, baking powder, baking soda, salt, and sugar.


  3. Pour the wet ingredients into the dry ingredients and mix until combined - do not overmix. A few lumps in the batter is perfectly fine and will result in fluffier pancakes.


  4. Preheat a non-stick skillet or griddle on medium-low heat.


  5. Lightly coat the skillet with 1 teaspoon of vegetable oil.


  6. Scoop about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set. Flip carefully and cook the other side for about 1-2 minutes.


  7. Place the finished pancakes on a serving dish and keep warm in a low oven.


  8. Serve warm with butter and maple syrup. Enjoy!
