Ingredients
• 3 cups flour
• 2 tablespoon baking powder
• ½ teaspoon salt
• 2 tablespoon sugar
• 2 large eggs
• 2 cups milk
• 1–1¼ cups plain Greek yogurt (or plain yogurt)
• ½ cup melted butter
• 1 teaspoon vanilla extract
Directions:
In a small bowl, combine the eggs, cooled melted butter, plain Greek yogurt, and milk. Whisk until the mixture is smooth and well combined.
In a large bowl, whisk together the flour, baking powder, salt and sugar.
Pour the wet ingredients into the dry. Whisk until just combined; a few lumps in the batter is perfectly fine. Do not overmix.
Preheat the skillet over medium heat and add 1-2 teaspoons of neutral oil.
Scoop the batter onto the skillet. When bubbles begin to form on the surface, flip the pancakes and cook the other side until it is golden brown.
Keep the pancakes warm on a platter and serve with butter and maple syrup. Enjoy!
