Serves: 4-6

Prep time: 10 Minutes

Bake time: 12-14 Minutes

Ingredients

  • 1 cup flour

  • 1/2 cup cornmeal

  • 1 teaspoon salt

  • 2 tablespoons honey

  • 6 tablespoons butter, cubed (cold)

  • 3/4 cup buttermilk

Directions:

  1. Preheat the oven to 450F and line a baking sheet with parchment paper.

  2. Pulse the cornmeal in a blender until it reaches a fine, flour-like consistency.

  3. Whisk the flour, ground cornmeal, and salt together in a large bowl.

  4. Add the cold cubed butter. Work it into the flour mixture using a pastry cutter or your fingertips until pea-sized crumbs form.

  5. Gently mix in the buttermilk and honey using a spatula until combined.

  6. Scoop dollops of dough onto the prepared baking sheet.

  7. Bake for 12-14 minutes, or until golden and puffy.

  8. Serve warm with butter, jam or any toppings of your choice. Enjoy!
