Ingredients


For the Cake Mix Cookie Dough:
  • 1 box chocolate cake mix

  • 2 large eggs

  • 1/3 cup vegetable oil

  • 1 teaspoon vanilla extract

  • 1 tablespoon all-purpose flour

  • 1/3 cup semi-sweet chocolate chips (optional)


For the Homemade Fudge Frosting & Topping:
  • 1/2 cup unsalted butter

  • 1/3 cup unsweetened cocoa powder

  • 1/3 cup heavy cream

  • 2 cups powdered sugar

  • 1/2 teaspoon vanilla extract

  • Pinch of salt

  • Rainbow candy-coated chocolate chips (like Mini M&Ms or Cosmic Chips)


Directions:


  1. Preheat the oven to 350F and prepare a baking sheet lined with parchment paper.


  2. In a large bowl, combine the chocolate cake mix, eggs, flour, vegetable oil, and vanilla extract using a spatula or an electric hand mixer.


  3. Fold the chocolate chips into the batter.


  4. Use an ice cream scoop to drop portions of dough onto the prepared baking sheet, leaving about 2 inches of space between.


  5. Bake for 11 minutes. Allow the cookies to sit on the baking sheet for 5 to 10 minutes. Transfer to a wire rack to cool completely before frosting.


  6. In a small saucepan over medium heat, melt the butter completely. Remove from heat and whisk in the cocoa powder until smooth.


  7. Return the saucepan to medium heat, add the heavy cream, and stir continuously for 30 seconds until warm.


  8. Remove from heat again, whisk in a pinch of salt and the vanilla extract until combined.


  9. Gradually whisk in the powdered sugar until the frosting is thick and glossy. Let it sit for 2 minutes to cool slightly.

    Tip: If the frosting is too thin, whisk in additional powdered sugar 1 tablespoon at a time. If it is too thick, stir in heavy cream 1 teaspoon at a time until smooth.


  10. Transfer the frosting into a piping bag and pipe a layer onto each cooled cookie. Top with candy coated chocolate immediately.


  11. Let the frosting set for 30 minutes before serving. Enjoy!
