Ingredients


  • 3 cups all-purpose flour

  • 2 tablespoons baking powder

  • 1/2 teaspoon salt

  • 2 tablespoons sugar

  • 1 teaspoon cinnamon

  • 1/4 teaspoon ground ginger

  • 1/2 teaspoon allspice

  • 4 tablespoons molasses

  • 2 large eggs

  • 2-3/4 cups milk

  • 1/2 cup melted butter

  • 1 teaspoon vanilla extract


Directions:


  1. In a bowl, whisk together the flour, baking powder, salt, sugar, cinnamon, ground ginger, and allspice. Set aside.


  2. In a separate bowl, whisk together the milk, eggs, melted butter, molasses, and vanilla extract until well combined.


  3. Pour the wet mixture into the dry mixture and mix all together until combined - do not over mix.


  4. Heat the skillet over medium heat on the stove. Lightly grease with vegetable oil (wipe off excess with paper towel so it is just a thin layer)


  5.  Scoop 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes), then flip and cook another 1-2 minutes until golden brown.


  6. Transfer pancakes to a plate and keep warm. Repeat the process with the remaining batter.


  7. Serve warm with butter and maple syrup. Enjoy!
