Ingredients
3 cups all-purpose flour
2 tablespoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon allspice
4 tablespoons molasses
2 large eggs
2-3/4 cups milk
1/2 cup melted butter
1 teaspoon vanilla extract
Directions:
In a bowl, whisk together the flour, baking powder, salt, sugar, cinnamon, ground ginger, and allspice. Set aside.
In a separate bowl, whisk together the milk, eggs, melted butter, molasses, and vanilla extract until well combined.
Pour the wet mixture into the dry mixture and mix all together until combined - do not over mix.
Heat the skillet over medium heat on the stove. Lightly grease with vegetable oil (wipe off excess with paper towel so it is just a thin layer)
Scoop 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes), then flip and cook another 1-2 minutes until golden brown.
Transfer pancakes to a plate and keep warm. Repeat the process with the remaining batter.
Serve warm with butter and maple syrup. Enjoy!
