Ingredients:


  • 1 container cottage cheese

  • 4oz cream cheese at room temperature

  • 1 cup chopped strawberries

  • 1/4 cup honey

  • 1 teaspoon vanilla extract


Directions:


  1. In a food processor, combine the cottage cheese, cream cheese, chopped strawberries, honey and vanilla extract. Blend until smooth and creamy.


  2. Pour the mixture into a food safe, freezer - safe container and spread it evenly. Place chopped strawberries on top.


  3. Place in the freezer for at least 6 hours, or until firm.


  4. Before serving, allow the ice cream to sit at room temperature for about 20 minutes to soften slightly.


  5. Scoop into a serving dishes and garnish with chopped strawberries and a swirl of strawberry jam. Enjoy!
