Ingredients:
1 container cottage cheese
4oz cream cheese at room temperature
1 cup chopped strawberries
1/4 cup honey
1 teaspoon vanilla extract
Directions:
In a food processor, combine the cottage cheese, cream cheese, chopped strawberries, honey and vanilla extract. Blend until smooth and creamy.
Pour the mixture into a food safe, freezer - safe container and spread it evenly. Place chopped strawberries on top.
Place in the freezer for at least 6 hours, or until firm.
Before serving, allow the ice cream to sit at room temperature for about 20 minutes to soften slightly.
Scoop into a serving dishes and garnish with chopped strawberries and a swirl of strawberry jam. Enjoy!
