Ingredients


  • 6 large peaches

  • 1/2 teaspoon vanilla extract

  • 1 tablespoon freshly squeezed lemon juice

  • 3 tablespoons cornstarch

  • 1/4 teaspoon salt

  • Dash of ground cinnamon, optional

  • 1/4 cup granulated sugar

  • 1/4 cup brown sugar

  • 1 cup + 2 tablespoons water


Directions:


  1. Cut the peaches into quarter-inch slices.


  2. On a medium-large sauce pan, add in the sugar, brown sugar, lemon juice, cornstarch, salt, and water. Whisk together until everything is combined.


  3. Turn on the stovetop to medium heat and stir continuously for 2-3 minutes until the mixture is glossy and thick. Add the vanilla extract and mix for another 30 seconds.


  4. Add the sliced peaches to the mixture and use a spatula to fold everything together. Gently stir the peaches for about 5 minutes until they become tender, be careful not to mash them.


  5. Remove from the heat and allow the peach filling to cool completely.


  6. Once cooled, transfer the filling to a food-safe airtight jar and place it in the refrigerator. Keep in the refrigerator for up to 2 weeks.


  7. Use this peach filling for pies, ice cream, toppings, and more. Enjoy!
