Ingredients


  • 2 Pillsbury pie crusts (1 box)

  • 1 cup pre made peach pie filling

  • Powdered sugar for dusting (optional)

  • Coarse sugar for sprinkling over pies before baking (optional)


Egg wash:
  • 1 egg

  • 1 teaspoon milk


Directions:


  1. Preheat the oven to 400F and prepare baking sheets that have been lined with parchment paper.


  2. Sprinkle flour on the countertop. Use a rolling pin to gently flatten and even out the Pillsbury pie dough on the counter. Do not roll it out thin; the thickness of the pie dough should remain the same.


  3. Use the backside of the dough press or use a circular bowl to cut circles into the dough.


  4. In a small bowl, pour the peach pie filling (homemade or store-bought).

    Optional: My homemade peach pie filling can be found on my website.

    Note: If the peach slices in the filling are large, slice them in half.


  5. If using a dough press, place the dough circle onto the ridged side and add 1-2 teaspoons of the peach filling to the center. Squeeze the dough press tightly closed and remove the hand pie. If you are not using a dough press, follow the same filling instructions, fold the dough over and use a fork to crimp and close the edges. Do not overfill.


  6. Place the hand pies onto the prepared baking sheet.


  7. In a small bowl, whisk together the egg and milk. Use a pastry brush to glaze the hand pies with the egg wash, then sprinkle course sugar on top.


  8. Place in the oven and bake for 15-17 minutes, or until the edges are golden brown.


  9. Allow the hand pies to cool for 30 minutes before serving. Garnish with a dusting of powdered sugar, and enjoy!
