Serves: 6-8
Prep time: Minimum 2 Hours
Bake time: 40 Minutes
Ingredients
1 package of active dry yeast (7g) or 2-1/4 teaspoons
1-1/2 teaspoons salt
1/3 cup honey + 1 tablespoon for the yeast mixture
1/4 cup melted butter (I used salted)
1 cup of warm water (110-115F)
1/3 cup milk
3-1/3 cups of bread flour (may use all-purpose flour)
3/4 cups quick oats
Directions:
In a bowl, combine warm water, yeast and 1 tablespoon of honey. Stir and let it sit for 5-10 minutes until foamy.
In a large mixing bowl, combine the proofed yeast, milk, melted butter and honey. Mix together until combined.
Add in the flour, oats and salt. Pour the flour in portions and mix together until dough start to form. Knead for about 7 minutes until smooth and elastic, and the dough pulls away from the bowl sides.
Lightly grease a bowl with non stick spray. Place the dough inside, cover with plastic wrap and a clean tea towel. Let it rise for 1 hour in a warm spot.
Lightly flour the counter. Punch down the dough and roll it into a loaf shape.
Place the dough in a prepared loaf pan that has been greased. Cover again and let rise for 40 minutes, or until it doubles in size.
Optional: spread honey and extra oats on top.
Preheat the oven to 350F and bake for 40 minutes. Leave the bread rest in the pan for 5 minutes, then transfer to a cooling rack to cool for 30 minutes.
Serve slices with butter, jam or any spread of your choice. Enjoy!
