Serves: 10 (1 can of apple filling)

Prep time: 20 Minutes

Bake time: 20 Minutes

Ingredients

  • 1 box Pillsbury pie crust (2 rolls)

  • 1 can apple pie filling (you can use homemade)

Crumble:
  • 1 cup quick oats or large oats

  • 1/3 cup all-purpose flour

  • 1 teaspoon ground cinnamon

  • 1/3 cup brown sugar

  • 1/3 cup cold salted butter, cubed

Directions:

  1. Lightly flour the countertop and roll out the Pillsbury pie crust dough. Do not thin the dough.

  2. Using a 4 1/2 inch circular cookie cutter, cut out circles of dough and place them into each cavity of a muffin pan. Gently press down with your fingers to form mini pie crusts. Set aside.

  3. In a bowl, blend the oats, brown sugar, flour, and cubed butter together using your hands until a crumbly texture forms. Stir in the cinnamon and set aside.

  4. In a bowl, add the pie filling and use a knife to cut the apples into smaller pieces.

  5. Fill each pie crust with the apple filling, then top generously with the crumble mixture (cover the apples completely).

  6. Preheat the oven to 435F and bake for 20 minutes, or until the pie crusts are golden brown and the filling is bubbling.

  7. Remove from the oven and let the pies cool in the muffin pan for 10 minutes. Then carefully transfer to a wire rack and let sit for another 10 minutes.

  8. Serve warm with a scoop of ice cream and a drizzle of caramel sauce. Enjoy!
