Ingredients


  • 2 cups pumpkin puree (not pumpkin pie filling)

  • 1/2 cup packed brown sugar

  • 1-2 tablespoons maple syrup (optional)

  • 1/4 cup water (may use apple juice or apple cider)

  • 2 teaspoons freshly squeezed lemon juice

  • 1-1/2 teaspoons pumpkin pie spice (recipe link below)

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 2 tablespoons butter


Directions:

  1. In a medium saucepan over medium heat, add in the brown sugar, pumpkin puree, pumpkin pie spice, cinnamon, salt, lemon juice, and water. Stir all together and allow the mixture to come to a bubble.


  2. Once it starts to bubble, lower the heat and let it simmer for 12 to 15 minutes, stirring continuously until smooth and thick.


  3. Turn off the stove and stir in the butter until combined. Optional: add in maple syrup for extra sweetness.


  4. Remove from heat and allow the pumpkin butter to cool completely before placing in a food safe jar.


  5. Spread this pumpkin butter on your waffles, toast, pancakes, on anything you want. Enjoy!
