Ingredients


  • 2 cups all purpose flour

  • 4 tablespoons sugar

  • 1/2 teaspoon salt

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon cinnamon

  • 1-1/2 cups milk

  • 3 tablespoons melted butter

  • 2 large eggs

  • 3/4 cup pumpkin puree


Directions:


  1. In a bowl, whisk together the milk, eggs, melted butter, pumpkin puree until smooth.


  2. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, salt and sugar just until incorporated.

  3. Add the wet ingredients into the dry ingredients and whisk gently until smooth - do no overmix.


  4. Heat the skillet over medium heat on the stove. Lightly grease with vegetable oil (wipe off excess with paper towel so it is just a thin layer)


  5. Scoop 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface and the edges look set (about 2-3 minutes), then flip and cook another 1-2 minutes until golden brown.


  6. Transfer pancakes to a plate and keep warm. Repeat the process with the remaining batter.


  7. Serve warm with butter and maple syrup. Enjoy!
