Serves: 6-8

Ingredients
1-1/3 cup sugar
8 tablespoons butter at room temperature
2/3 cup heavy cream (35% fat or higher)
1 teaspoon salt
1 teaspoon vanilla extract
3 tablespoons water
Directions:
In a saucepan over medium heat, add in the sugar and water. Gently give it a swirl and allow the sugar to caramelize for 15 minutes. Do not stir - only swirl the pan occasionally.
Once the sugar has crystalized, continue cooking for another 2 minutes until the sugar turns a light amber-golden colour.
Once the sugar has reached the desired colour, remove from heat. Stir but do not scrape the bottom of the saucepan just in case anything has sticked to the bottom.
Gently pour and stir in the heavy cream into the pot. Be careful of steam and bubbles.
Add in the butter, salt and vanilla extract. Stir continuously until the butter is melted.
Leave it in the saucepan for 5-7 minutes to cool.
Pour in a food safe jar and allow it to completely cool before placing in the fridge or before using. Enjoy!
