Ingredients


  • 1/2 cup butter, room temperature

  • 1 cup granulated sugar (reserve 1/3 cup for topping)

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 + 1/8 cups all-purpose flour

  • 1 + 1/2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 2/3 cup plain Greek yogurt

  • 1 large ripe banana, mashed

  • 150g mini chocolate chips (reserve 1/4 cup for topping)


Directions:


  1. Preheat the oven to 350F.


  2. Line a 9- inch springform pan or a cake pan with parchment paper and spray with non-stick cooking spray. Place the pan on a baking sheet to catch any potential spillage.


  3. In a large bowl, whisk together the softened butter and sugar for about 3-5 minutes until light and fluffy.


  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, mashed banana and Greek yogurt until fully combined.


  5. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon. Toss the chocolate chips into the flour mixture until lightly coated.

    Note: This keeps the chocolate chips from sinking to the bottom.


  6. Add half of the dry ingredients to the wet mixture and gently fold using a spatula. Add the remaining half and fold until just combined. Do not over mix.


  7. Pour the batter into the prepared pan and smooth the top with an offset spatula. Sprinkle extra chocolate chips and granulated sugar over the top.


  8. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.


  9. Allow the cake to cool in the pan for about 2 hours, then carefully remove it from the pan onto a serving plate.


  10. Slice, serve and enjoy!
