Ingredients


  • 2x (7gm) packages of active dry yeast (4-1/2 teaspoons)

  • 3/4 cup warm water

  • 1-3/4 cup warm milk (use 2% or 3%)

  • 1/3 cup melted salted butter + 2 tablespoons for brushing rolls after baking

  • 2 large eggs

  • 5 tablespoons granulated sugar + 1 teaspoon for the yeast

  • 1 teaspoon salt

  • 7-1/3 cups all purpose flour


Directions:


  1. In a microwave-safe measuring cup, combine the milk and water. Warm for about 45 seconds, or until the temperature reaches 110-115F. Stir in the active dry yeast and 1 teaspoon of sugar. Let the mixture sit for 5-10 minutes until it blooms.


  2. In a bowl, whisk together the yeast mixture, melted butter and eggs for about 20 seconds until everything is well blended.


  3. In a separate bowl, whisk together the flour, sugar, and salt. Add the dry ingredients into the wet in two additions. Stir in the first half until smooth. Then add in the remaining and mix until a soft dough forms.


  4. When the dough has formed, kneed for 6-7 minutes until it becomes smooth and elastic.


  5. Lightly grease a large bowl with non-stick spray. Place the dough inside, turning it once to coat with oil. Cover the bowl with plastic wrap and a clean tea towel and let the dough rise in a warm spot for 45-60 minutes, or until it has doubled in size.


  6. Once it has doubled, punch down the risen dough to release air. Transfer to a lightly floured surface and divide it in half. Work with one half at a time, stretch the dough into a 10 inch oval about 1 inch thick.


  7. Cut the dough into 6 strips, then in half lengthwise to make small pieces. Roll each piece into a ball, pinching the seams on the bottom to seal.


  8. Lightly grease a 15x13 inch baking pan with non-stick spray. Arrange the dough balls evenly in the pan. Cover with plastic wrap and a clean tea towel, and let it rise again for 20 minutes, or until puffy and nearly doubled in size.


  9. Preheat the oven to 350F and bake the rolls for 30 minutes, or until the top are a golden brown.


  10. Brush melted butter on each roll and serve warm with butter. Enjoy!
