Ingredients


• 3 cups flour

• 2 tablespoons baking powder

• 1/2 teaspoon salt

• 2 tablespoon sugar

• 2 large eggs

• 2-2/3 cups milk + 3 tablespoon vinegar (homemade buttermilk)

• 1/2 cup melted butter

• 1 teaspoon vanilla extract


Directions:


  1. In a bowl, add in the buttermilk (homemade or store bought), melted butter that has been cooled at room temperature for at least 5 minutes, vanilla extract, and eggs. Whisk until well combined.


  2. In a separate large bowl, whisk together the flour, baking powder, salt and sugar.


  3. Add the wet ingredients to the dry ingredients. Whisk until just combined- do not overmix. A few lumps in the batter are perfectly fine.


  4. Preheat the pan or skillet on the stove over medium-low heat. Add 1 teaspoon of neutral oil to the pan. Scoop the batter onto the pan and cook until bubbles form on the surface. Flip and cook the other side until golden brown.


  5. Place the pancakes on a serving dish and keep warm. Serve with butter and maple syrup.


    This recipe makes about 12-14 large pancakes. Enjoy!
