Ingredients
• 2 cups of quinoa
• 4 cups of water
• 1/2 teaspoon of garlic powder
• 1/2 teaspoon of onion powder
• 1/2 teaspoon of paprika
• 1/2 teaspoon of salt
• 1/2 teaspoon of black pepper
• 1 chicken bouillon cube
• 1 onion, finely diced
• 3 tablespoons of olive oil (for the quinoa)
• 3 tablespoons of butter (for the quinoa)
• 1 tablespoon of butter (for the eggs)
• 1 package of breakfast sausage
• 2 large eggs
• 3/4 cup of shredded cheddar cheese
Directions:
In a saucepan over medium heat, add in olive oil and butter. Sauté the onions until translucent. Add the rinsed quinoa and mix for 2 minutes. Stir in the water and season with chicken bouillon cube, onion powder, paprika, garlic powder, salt and black pepper. Bring to a boil, then reduce to low heat, cover and simmer for 18 minutes. Remove from heat and let sit, covered, for 5-7 minutes.
In a frying pan over medium heat, add butter and cook the sausages until brown. Set aside.
In the same frying pan, make scrambled eggs with butter.
In a large oven-safe serving dish, combine the cooked quinoa, sausage, and scrambled eggs. Mix together.
Sprinkle shredded cheese on top. Broil in the oven until the cheese is bubbly and melted.
Enjoy warm as a hearty breakfast, dinner, side dish or main meal.
