Ingredients
1-2/3 cups sugar
1 cup pumpkin puree (not pumpkin pie filling)
1/2 cup vegetable oil
2 large eggs
1/3 cup milk
1-3/4 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice (recipe link below)
1/3 cup chopped walnuts
1 teaspoon vanilla extract
Streusel Topping:
3 tablespoons all-purpose flour
2 tablespoons brown sugar
1/4 teaspoon cinnamon
1/4 cup cold butter, cubed
Directions:
In a large bowl, whisk together the sugar, eggs, vegetable oil, milk, vanilla extract and pumpkin puree until smooth.
Fold in the flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt into the wet batter with a spatula just until combined.
Fold the chopped walnuts into the batter with a spatula. Set aside.
In a separate bowl, mix together flour, brown sugar, cinnamon and cold cubed butter with your hands until crumble texture forms.
Grease a 9x5 inch loaf pan with non-stick spray and line it with parchment paper.
Pour the batter into the loaf pan and spread evenly. Sprinkle the streusel toping all over.
Preheat the oven to 350F and bake for for 1 hour, or until a toothpick inserted in the center comes out clean. Cool in the pan for 30 minutes, then transfer to a wire rack to cool completely.
Optional: To make the glaze, whisk together icing sugar with milk until the perfect consistency forms and drizzle over the cooled loaf.
