Ingredients
2-1/2 cups flour
1/2 cup almond flour
2 teaspoon baking powder
1/4 teaspoon salt
1 can strawberry pie filling
2 teaspoon vanilla extract
1 cup softened butter
1-1/2 cups sugar
4 eggs
Icing:
1-1/4 cups icing or powdered sugar
About 4 tablespoon half & half cream
Directions:
Preheat the oven to 350F.
In a mixing bowl, whisk the softened butter and sugar for 2-3 minutes until it is light and fluffy.
Add in the vanilla extract and eggs. Whisk all together for 1 minute until combined.
Sift the dry ingredients - flour, almond flour, baking powder, and salt into the batter. Mix until well incorporated.
Grease a 9x13 inch cake pan with non-stick spray. Spread 2/3 of the batter evenly to the bottom of the pan with a spatula. Pour the strawberry pie filling over the batter layer. Dollop the remaining batter on top of the strawberry filling.
Bake for 45-50 minutes. Let the cake cool in the pan for 30-40 minutes before glazing.
In a bowl, whisk together powdered sugar and half & half cream to create a smooth glaze.
Drizzle the glaze over the warm cake. Enjoy!
