Ingredients


Dough:
  • 2-1/4 cups all-purpose flour

  • 2 teaspoons sugar

  • 1/2 teaspoon salt

  • 1/2 cup butter or lard at room temperature

  • 8oz of softened cream cheese at room temperature (or 1 cup of sour cream)

  • 1 egg yolk


Beef Filling:
  • 1 pound lean ground beef

  • 2 tablespoon olive oil

  • 1 tablespoon tomato paste

  • 1 large onion finely chopped

  • 3 cloves of garlic finely chopped (optional)

  • 1/2 cup sour cream

  • 1 teaspoon salt

  • 1/2 teaspoon oregano

  • 1/2 teaspoon dried parsley

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika


Egg wash:
  • 1 egg + 1 teaspoon milk


Directions:


  1. Heat a pan over medium heat. Add 2 tablespoons of olive oil and ground beef. Break up the ground beef and cook until fully browned. Drain and discard the excess fat.


  2. Stir in the tomato paste until combined with the beef.


  3. Add the onion, garlic, oregano, black pepper, dried parsley and paprika. Cook for 2-4 minutes, stirring often, until the onions have softened.


  4. Remove the pan from heat and stir in the sour cream. Set aside and allow the filling to cool completely.


  5. In a mixing bowl, combine the cream cheese and softened butter. Beat until smooth. Add in the egg yolk and mix until incorporated. Add the flour, sugar, and salt, then mix for about 1 minute until a dough forms.


  6. Lightly flour the counter and roll out the dough until 1/4 inch thickness. Use a 5 inch round cookie cutter to cut out the circles.


  7. Line a baking sheet with parchment paper.


  8. Slightly stretch each dough circle with a rolling pin. Place about 1 tablespoon of the cooled beef filling in the center. Fold the dough over to form a half-moon shape and pinch the edges closed. Use a fork to crimp and seal the edges.


  9. Preheat the oven to 425F.


  10. In a bowl, whisk together the egg and milk. Use a pastry brush to coat the tops of each turnover with the egg wash.


  11. Bake for 18-20 minutes, or until golden brown.


  12. Let them sit for 15 minutes before serving. Enjoy!
