Prep time: 20 minutes (excluding sweet potato bake time)
Bake time: 55 Minutes
Ingredients
• 3 cups all-purpose flour
• 1 tablespoon baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon salt
• 2 tablespoon honey
• 1/3 cup melted butter
• 1 large egg + 1 egg yolk
• 1-½ cups mashed, cooled sweet potato
• 3/4 cup buttermilk
Directions:
Preheat the oven to 425F and bake the sweet potatoes for 45-60 minutes, or until fork tender. Once cooled, remove the skins, mash the flesh until smooth, and set aside to cool completely.
In a bowl, whisk together the sweet potatoes, eggs, buttermilk, and honey until smooth.
Pour in the melted butter (ensure it has cooled at room temperature for at least 5 minutes) and mix thoroughly.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually fold the dry ingredients into the wet mixture in 2 portions and mix until combined. The dough should be a tacky.
Grease a 9x5 inch loaf pan and line it with parchment paper for easy removal.
Using a greased dough scraper or spatula, transfer the dough into the prepared loaf pan. With lightly greased hands, spread the dough into an even layer.
Preheat the oven to 375F and bake for 55 minutes, or until a toothpick inserted into the middle comes out clean.
Let the bread rest in the pan for 5 minutes, then brush the top with butter. Transfer to a wire rack to cool before slicing.
Serve warm with butter, or any toppings of your choice. Enjoy!
