Serves: 6-8
Prep time: 15 Minutes
Bake time: 40-45 Minutes
Ingredients:
1 pound of fresh blueberries (500g package)
3/4 cup sugar
1/3 cup sugar (to macerate blueberries)
10 tablespoons melted butter (I used unsalted)
1-1/2 cups all-purpose flour
3 teaspoons baking powder
1 cup of milk
1 teaspoon vanilla extract
1/2 teaspoon salt
Directions:
In a bowl, mix the blueberries with sugar until evenly coated. Set aside to macerate.
Pour the melted butter into a 9x13 inch baking dish and spread it evenly across the bottom.
In a separate bowl, whisk together the flour, baking powder, salt and sugar. Add in the milk and vanilla extract, and mix until a smooth batter forms.
Pour the batter evenly into the baking dish over the melted butter. Add the macerated blueberries on top.
Preheat the oven to 350F and bake for 41 minutes, or until the top is golden brown. Let the cobbler sit at room temperature for 20 minutes before serving.
Serve with ice cream, whipped cream, or enjoy it on its own!
