Serves: 6-8

Ingredients


  • 1 recipe caramelized sugar (link below)

  • 5 large eggs, at room temperature

  • 1-3/4 cups granulated sugar

  • 4 cups all purpose flour

  • 1-1/4 cups butter, at room temperature

  • 3/4 cup milk

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 2 teaspoons vanilla extract

  • 3 ripe bananas


Directions:


  1. In a large bowl, whisk together the butter and sugar for 3 minutes until it's light and fluffy. Add the vanilla extract and eggs, then mix until smooth.


  2. Gradually add the flour by splitting it into two portions. Whisk in the first half, then fold in the second half using a spatula- the mixture will be thick. Add the milk in two portions as well, folding it in after each addition.


  3. Add the salt and baking powder. Fold until fully incorporated.


  4. Preheat the oven to 350F and grease a baking dish with non-stick spray.


  5. Pour the caramelized sugar into the base of the baking dish to form the bottom layer of the cake. Set aside.


  6. Slice the bananas vertically in half. Lay them cut side down over the caramelized sugar layer.


  7. Using an ice scream scoop, add scoopfuls of the batter over the bananas. Gently spread the batter evenly using an offset spatula.


  8. Bake for 50 Minutes. Let the cake cool in the baking dish for 10 minutes, then carefully invert it onto a serving dish. Allow it to come to room temperature before serving. Enjoy!
