Serves: One Recipe

Ingredients


  • 1-1/2 cups granulated sugar

  • 3/4 cup hot water (not boiling)


Directions:


  1. In a saucepan over medium heat, add the sugar. Continuously stir for 15 minutes until the sugar melts and turns to an amber colour.


  2. Turn off the heat, then carefully and slowly pour the hot water into the saucepan. Be cautious as the mixture may start to bubble up. Stir to combine with the caramelized sugar.


  3. Tip: If the caramelized sugar starts to harden, keep siring and gradually add more hot water.

  4. Once all the water is added, turn the heat back on to a low setting. Stir for 3-4 minutes, until the mixture is smooth and no clumps remain.


  5. Turn off the heat and let the mixture sit at room temperature for 5 minutes. It should begin to thicken to a syrup-like consistency.


  6. Pour into a heat-safe bowl. Let it cool at room temperature for 30 minutes. Stir, and cover with plastic wrap, and refrigerate for at least 2 hours before using. Enjoy!
