Ingredients
1-1/2 cups flour
1/2 teaspoon salt
3 tablespoons sugar
3 eggs
1-1/4 cups milk
2/3 cup half & half cream
1 tablespoon vanilla extract or 1 teaspoon vanilla paste
3 tablespoons of melted butter + some butter for frying pan
Directions:
In a blender, add the eggs, half & half cream, milk, vanilla extract (or paste) and butter. Blend until smooth and well combined.
Add the flour, salt, and sugar into the blender. Blend for 2 minutes until the batter is fully mixed and smooth. Pour the mixture into a measuring cup or bowl for easy pouring.
Heat a frying pan over medium heat and add a small amount of butter. Once the butter is melted, use a 1/2 measuring cup to pour the batter into the frying pan (use 1/4 cup for smaller pans). Swirl the pan to spread the batter into a thin, even layer.
Cook until the bottom is golden brown and the top is no longer liquid. Flip and cook the other side until golden. Remove and transfer to a serving plate.
Add your favorite toppings such as whipped cream, fresh fruit, Nutella or maple syrup. Enjoy!
