Ingredients
• 1 cup brown sugar
• 1/4 cup granulated sugar
• 1/2 cup vegetable oil
• 2 large eggs, at room temperature
• 2 teaspoons vanilla extract
• 1 teaspoon instant coffee granules
• 1 cup all purpose flour
• 2/3 cup unsweetened cocoa powder
• 1 teaspoon ground cinnamon
• 1-1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/4 teaspoon baking soda
• 1/2 cup plain Greek yogurt
• 1/3 cup Irish dry stout beer (Guinness)
• 2/3 cup semisweet chocolate chips
Directions:
In a large bowl, whisk together the brown sugar, granulated sugar, and vegetable oil until combined. The mixture should have a sandy, crumbly texture.
Add in the eggs one at a time, whisking after each addition until the mixture is smooth.
Stir instant coffee powder into the vanilla extract until fully dissolved. Pour into the sugar mixture and whisk until combined.
In a separate bowl, whisk together the unsweetened cocoa powder, flour, salt, cinnamon, baking powder, and baking soda.
In a smaller bowl, whisk together the plain Greek yogurt and Guinness beer until smooth.
Carefully fold the dry ingredients and the beer mixture into the wet ingredients. Start by folding 1/3 of the dry ingredients and add 1/2 of the beer mixture and fold gently. Repeat, ending with the final portion of the dry ingredients.
Gently fold in the chocolate chips.
Grease a loaf pan with non stick pray and line with parchment paper. Leave an overhang on the sides for easy lifting.
Pour the batter into the prepared pan, smoothing the top with a spatula.
Preheat the oven to 350F and bake for 50 minutes, or until a toothpick inserted comes out clean.
Let the loaf cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
Add a dusting of powdered sugar on top.
