Serves: 6
Prep time: 30 Minutes
Bake time: 45-50 Minutes
Ingredients
4 cups all-purpose flour + 3 tablespoons (1 tablespoon for raisins & 2 tablespoons for forming the dough)
5 tablespoons sugar
1 teaspoon baking soda
1 teaspoon salt
5 tablespoons cold cubed butter (I used salted)
1-1/2 cups buttermilk
1 cup raisins
1 large egg + 1 large egg yolk
zest of 1 orange
Directions:
In a large mixing bowl, whisk the sugar, salt, baking soda, and flour for 30 seconds.
Add the butter and whisk together for 2 minutes until the mixture reaches a crumbly texture.
In a separate bowl, whisk together the eggs, buttermilk and orange zest.
Slowly pour the wet ingredients into the dry ingredients while mixing. Continue until a tacky dough forms.
In a small bowl, toss the raisins in a light coating of flour. Fold them into the main mixing bowl until just combined.
Turn the dough out onto a floured surface. Using your hands, gently roll and shape the dough into a round disc.
Place the dough on a baking sheet lined with parchment paper.
Use a sharp knife to score a cross shape (an 'x') into the top of the bread.
Preheat the oven to 375F and bake for 45-50 minutes. The loaf is done when it sounds hollow when tapped on the bottom.
After baking, immediately transfer to a wire rack to cool completely for 1-2 hours.
Slice, serve with butter and enjoy!
