Serves: 6

Prep time: 30 Minutes

Bake time: 45-50 Minutes

Ingredients

  • 4 cups all-purpose flour + 3 tablespoons (1 tablespoon for raisins & 2 tablespoons for forming the dough)

  • 5 tablespoons sugar

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 5 tablespoons cold cubed butter (I used salted)

  • 1-1/2 cups buttermilk

  • 1 cup raisins

  • 1 large egg + 1 large egg yolk

  • zest of 1 orange

Directions:

  1. In a large mixing bowl, whisk the sugar, salt, baking soda, and flour for 30 seconds.

  2. Add the butter and whisk together for 2 minutes until the mixture reaches a crumbly texture.

  3. In a separate bowl, whisk together the eggs, buttermilk and orange zest.

  4. Slowly pour the wet ingredients into the dry ingredients while mixing. Continue until a tacky dough forms.

  5. In a small bowl, toss the raisins in a light coating of flour. Fold them into the main mixing bowl until just combined.

  6. Turn the dough out onto a floured surface. Using your hands, gently roll and shape the dough into a round disc.

  7. Place the dough on a baking sheet lined with parchment paper.

  8. Use a sharp knife to score a cross shape (an 'x') into the top of the bread.

  9. Preheat the oven to 375F and bake for 45-50 minutes. The loaf is done when it sounds hollow when tapped on the bottom.

  10. After baking, immediately transfer to a wire rack to cool completely for 1-2 hours.

  11. Slice, serve with butter and enjoy!
