Serves: 4-6

​Prep time: 15 Minutes (excluding raisin soak)

Bake time: 55 Minutes


Ingredients


Raisin Soak
  • 1 cup raisins or currants (or both)

  • 1 cup hot strong black tea

  • 2–3 tbsp brown sugar


Cake Ingredients
  • 2 cups flour

  • 2 teaspoon baking powder

  • 2 tablespoon sugar

  • 1 teaspoon cinnamon

  • 1/8 teaspoon nutmeg

  • 1/2 teaspoon salt

  • 1 large egg

  • 2 tablespoon butter, melted and cooled

  • 1/4 cup milk

  • 2 teaspoon vanilla extract


Directions:


  1. Combine the raisins, sugar, and hot tea in a bowl. Let it soak for at least 2 hours or ideally overnight, until the raisins are plump and the tea has cooled.


  2. In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg and salt until combined.


  3. In a separate bowl, whisk together the eggs, sugar, vanilla extract, milk, and melted butter until smooth. Stir in the raisin soak mixture using a spatula.


  4. Gradually add the dry ingredients to the wet ingredients in two batches. Fold gently until just combined - do not over mix.


  5. Grease a 9x5 inch loaf pan and line it with parchment paper, leaving a slight overhang on the sides for easy removal.


  6. Pour the batter into the prepared loaf pan and smooth the top evenly with a spatula.


  7. Preheat the oven to 350F and bake for 55 minutes, or until a toothpick inserted at the center comes out clean.


  8. Allow the loaf to rest in the pan for 10 minutes. Use the parchment overhang to life it out and transfer to a wire rack to cool.


  9. Slice, serve with generous amounts of butter and enjoy!
