Serves: 4-6
Prep time: 15 Minutes (excluding raisin soak)
Bake time: 55 Minutes
Ingredients
Raisin Soak
1 cup raisins or currants (or both)
1 cup hot strong black tea
2–3 tbsp brown sugar
Cake Ingredients
2 cups flour
2 teaspoon baking powder
2 tablespoon sugar
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 teaspoon salt
1 large egg
2 tablespoon butter, melted and cooled
1/4 cup milk
2 teaspoon vanilla extract
Directions:
Combine the raisins, sugar, and hot tea in a bowl. Let it soak for at least 2 hours or ideally overnight, until the raisins are plump and the tea has cooled.
In a bowl, whisk together the flour, baking powder, cinnamon, nutmeg and salt until combined.
In a separate bowl, whisk together the eggs, sugar, vanilla extract, milk, and melted butter until smooth. Stir in the raisin soak mixture using a spatula.
Gradually add the dry ingredients to the wet ingredients in two batches. Fold gently until just combined - do not over mix.
Grease a 9x5 inch loaf pan and line it with parchment paper, leaving a slight overhang on the sides for easy removal.
Pour the batter into the prepared loaf pan and smooth the top evenly with a spatula.
Preheat the oven to 350F and bake for 55 minutes, or until a toothpick inserted at the center comes out clean.
Allow the loaf to rest in the pan for 10 minutes. Use the parchment overhang to life it out and transfer to a wire rack to cool.
Slice, serve with generous amounts of butter and enjoy!
