Ingredients


  • 4–5 lbs Yukon Gold or Red Potatoes

  • 4 Scallions, finely chopped

  • Small bunch fresh parsley (about 3 tablespoon)

  • 2 hard-boiled eggs


Dressing:
  • 2/3 cup mayonnaise

  • 2 teaspoon yellow mustard or Dijon mustard

  • 2 teaspoon white vinegar

  • Salt & pepper to taste

  • 1/4 teasoon sugar (balances the dressing)


Directions:


  1. Place the potatoes in a large pot and cover with salted cold water. Bring to a boil, then reduce to a simmer for 15-20 minutes until fork tender.


  2. While the potatoes cook, boil the eggs in a separate pot. Once done, peel and chop them.


  3. Drain the potatoes in a colander and let them sit in a 15 minutes.


  4. In a large bowl, combine the potatoes, scallions, parsley and chopped eggs.


  5. In a small bowl, whisk together the mayonnaise, yellow mustard, vinegar, salt, black pepper, and sugar until smooth.


  6. Pour the dressing over the potatoes and toss gently to coat.


  7. Garnish with extra parsley, scallions, and a sliced boiled egg. Serve chilled and enjoy!
