Ingredients
2 cups shortbread cookies (broken into pieces)
4oz cream cheese, room temperature
1/2 tsp vanilla extract
1/2 tsp almond extract
1/4 tsp salt
Chocolate:
340g bag of white chocolate candy melts
1/4 tsp vegetable oil
Directions:
Break the shortbread cookies into smaller pieces.
Add the cookies into a food processor and pulse until they fine crumbs form.
Add the cream cheese, salt, vanilla extract, and almond extract. Pulse until fully combined and a dough forms.
Transfer the dough to a bowl, cover with plastic wrap, and refrigerate for 30 minutes.
Remove the dough from the fridge and line a baking sheet with parchment paper.
Using a small ice cream scoop, scoop the dough and roll it between your hands to form a ball. Place each ball onto the prepared cookie sheet.
In a microwave-safe bowl, melt the white chocolate in 30 second intervals, stirring after each interval, until completely melted. Stir in 1/4 teaspoon of vegetable oil to smooth the chocolate.
Dip each dough ball into the melted chocolate, coating completely.
Top with sugar sprinkles, festive jimmies, sea salt, or any toppings of your choice on each truffle.
Place the truffles in the fridge for 30 minutes, or until firm and set. Enjoy!
