Ingredients
• 1 cup freshly squeezed orange juice
• 3 large eggs
• Zest of one orange
• 1 teaspoon vanilla extract
• 1¼ cups sugar
• ½ cup olive oil or vegetable oil
• ½ cup melted butter
• 2 cups all-purpose flour
• ½ teaspoon salt
• 2 teaspoons baking powder
Directions:
Slice and juice the oranges. About 5 oranges are needed to make 1 cup of orange juice. Set aside a few tablespoons of juice for the glaze later.
In a blender, combine the eggs, olive oil, melted butter, sugar, orange juice, vanilla extract and the zest of one orange. Blend until smooth and well combined.
In a bowl, whisk together the flour, baking powder and salt. Add the dry ingredients into the blender and blend just until combined - do not over mix.
Pour the batter into a greased and floured 10-cup Bundt pan.
Preheat the oven to 350F and bake for 35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 5 minutes, then transfer to a cooling rack and let it cool for 1 hour.
For the glaze: In a bowl, mix powdered sugar, a pinch of salt and 4 tablespoon of orange juice. Whisk until a smooth icing forms. If needed, add more orange juice 1 tablespoon at a time until you reach the desired consistency.
Once the cake is cooled, pour the glaze over the top and garnish with extra orange zest. Enjoy!
