Ingredients
Loaf:
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
2 large eggs
1-1/2 cups sugar
1 cup pumpkin puree
1/2 cup melted butter
1 cup chopped and peeled apples
Topping:
3 tablespoons brown sugar
1 teaspoon cinnamon
Icing:
1/3 cup powdered sugar
1-1/2 tablespoons milk
Directions:
Chop apples into small pieces. To prevent browning, place them in a bowl of cold water with the juice of a lemon.
In a bowl, add in the pumpkin puree, sugar, melted butter, eggs, flour, salt, pumpkin pie spice, cinnamon, and baking soda. Whisk together until combined.
Gently fold the chopped apples into the batter using a spatula.
Grease and line a 9x5 inch loaf pan with parchment paper.
Pour the batter into the prepared loaf pan and spread evenly. Set aside.
In a small bowl, mix together cinnamon and brown sugar. Sprinkle evenly over the batter.
Preheat the oven to 350F and bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool completely before removing from pan.
In a small bowl, whisk together powdered sugar and milk until smooth to create the icing. Drizzle over the cooled loaf.
Slice and serve. Enjoy!
