Ingredients
1 jalapeno finely diced
1/2 of a red onion finely diced
A bunch of cilantro, finely chopped
3 mini cucumbers or 1/2 an English cucumber, diced
1 tomato without seeds, finely chopped
Juice of 2 limes
2-3 tablespoons extra virgin olive oil
1/2 - 1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Directions:
Chop and dice all the vegetables needed.
In a large bowl, combine the chopped yellow peppers, cucumbers, tomato, cilantro, jalapenos, and red onion.
Add the salt, black pepper, garlic powder, lime juice and olive oil. Mix everything together using a large spoon until well combined.
