Serves: 7-12 (depends on how big the muffin)

Bake time: 18-22 Minutes


Ingredients


  • 2 cups flour

  • 1/2 cup packed brown sugar

  • 1-1/2 teaspoon baking powder

  • 3 eggs

  • 2 tablespoon milk

  • 1/4 cup of strawberry jam

  • 1/4 cup vegetable oil

  • 3/4 - 1 cup chopped strawberries


Filling:
  • 1/2 cup cream cheese softened

  • 3 tablespoons sugar


Directions:


  1. In a bowl, whisk together the brown sugar and eggs for about 1 minute, until well combined. Add the vegetable oil, strawberry jam, and mix again until fully incorporated.


  2. In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet mixture, whisking until the batter is thick and fluffy.


  3. Mix in the milk and vanilla extract until smooth. Optional: add in strawberry emulsion for extra flavor.


  4. Gently fold in the chopped strawberries, then set the batter aside.


  5. In another bowl, mix the softened cream cheese with the sugar until it is smooth and well combined.


  6. Line a muffin pan with muffin cups. Fill each cup about 3/4 full with batter. Add a teaspoon of cream cheese filling into the center of each muffin, then top with another small spoonful of batter. Garnish the tops with additional chopped strawberries.


  7. Preheat the oven to 375F and bake for about 18-22 minutes, depending on the size of the muffin cups. (Note: The recipe referenced used larger muffin cups and baked for 24 minutes)


  8. Let the muffins cool before serving. Enjoy!
